Prud'homme Beer Certification® Level I - Beer Enthusiast

This introductory course in beer education is designed for participants interested in furthering their knowledge and interest in beer. The focus will be on brewing ingredients and processes, tasting concepts, pouring and serving concepts (including an introduction to draught systems) and food and beer pairings.

Dan grew up working in the hospitality industry and has worked in restaurant management, portfolio development, and beverage training. Currently he is the General Manager at Royal City Brewing Company where he oversees the day to do operations of the brewery and Beer Hall. He is a Prud’homme Master Beer Sommelier and general nerd when it comes to food and drink.

Minimum / Maximum Class Size

For a class to run, we must meet a mimium of 10 participants, please register early. The maximum class size is 12.

Learning Outcomes

1. Demonstrate a clear understanding of brewing ingredients
a. Explain the characteristics provided by malt
b. Explain the attributes that hops bring to beer
c. Describe the potential benefits of using adjuncts

2. Illustrate a basic knowledge of brewing
a. Describe the various stages in brewing in layman’s terms
b. Compare and contrast two major brewing styles (ales and lagers)
c. Discuss and record the various tasting components of a variety of beer styles

3. Integrate ingredient characteristics and beer flavours into the concepts of beer and food pairing
a. Differentiate between Cut, Complement and Contrast pairing theories
b. Record your personal observations of a variety of beer and food pairings

4. Recognize the need for quality draught beer
a. Identify the issues contributing to poor quality draught beer
b. Describe the troubleshooting sequences and list the 3 areas of concern in draught quality
c. Observe common mistakes in pouring and serving draught beer and identify the benefits of pouring with
foam

How to gain the qualification

You must successfully complete a multiple choice exam of 80 questions, with a passing grade of 70% on the final exam.  Successful participants will be issued a Prud’homme Beer Certification®.

The exam will take place on the last session date.

Prerequisite

There is no prerequisite for Level 1. Note, Level 1 is a prequisite before enrolling in Level 2.

Fee

$500 + HST ($65) = $565

A $25 discount will apply to U of G students/staff/faculty/alumni. $475 + HST ($61.75) = $536.75

Age restrictions

You must be 19 years of age by course start date. Students who choose not to taste alcohol for health, religious or other reasons will not find this a barrier to successfully completing the Level 1 certification.

Cancellation

If cancellation occurs between registration and 10 working days prior to the course start date, an administration fee of $150 will apply. Cancellation must be made in writing with a valid reason of withdrawl. There will be no refunds for cancellations within 10 working days of class start.
