Research Summary: Postharvest fruit and vegetable waste account for a large proportion of the nearly 60 per cent of total food produced that goes to landfills in Canada. This includes berries and specialty vegetables, for which there are no best management practices for postharvest preservation. This research will investigate postharvest management strategies and technologies to reduce the deterioration of specialty horticultural crops, including the postharvest application of unique antioxidants that are naturally derived from plants and mushrooms.
