A University of Guelph research team led by Dr. George van der Merwe, Department of Molecular and Cellular Biology, is aiming to expand and diversify Ontario’s craft cider industry. The team will support industry growth by developing new cider apple varieties and cultivating novel yeast strains to enhance flavour and product variety. They will also investigate how taxation affects the industry, providing insights to inform policy and support producers in navigating economic challenges and opportunities in this growing sector.
