Even in today's digital era, nature remains the most thoughtful architect ever. It is not The Colosseum, here, we observe the microstructure of an oyster mushroom using micro-computed tomography (Micro-CT). The arrangements of molecules into defined elements and subsequent assembly into larger domains comprise the structure of biological materials such as mushrooms. Understanding food microstructure can guide the development of effective shelf-life extension strategies and mitigation approaches to reduce food waste.
